  1. You can tell before evolving dunsparce. If you don't have the 3 segment form, catch a dunsparce and look at the image next to the evolve button. It will be grey if it's a 3 segment evolver if you don't have a 3 segment already.

  2. Are Pokemon hatched from eggs already pre-determined when you acquire them during the prior hatch rotation? Or are they only determined after they hatch during the current rotation?
