You walk it 10km as your buddy, doesn’t have to be in one day but must be constantly your buddy until 10km is travelled.
Then, while still as your buddy. The evolve symbol will change from ? To either Umbreon or Espeon, depending on the time of day. If it’s early morning, wait till night time. Let thing you want is the night/day cycle to change at the wrong time.
Despite what everyone else has said and I know you won’t. Do not use the naming trick. People learn that by experience, for when they’d actually need to use it. As you can easily take the time to do this right, do it right.

Absolutely make sure the prompt to evolve has an actual umbreon showing. I had done the walking and it was dark out but not considered “night”. I didn’t know it would actually show the evolution before.

Click your heels together three times, whisper “Umbreon, Umbreon, Umbreon”, then hit the evolve button. Works every time!

Also “distance walked together” isn’t the distance that matters, find your buddy in your Pokémon storage and scroll to the bottom, it’ll show “distance walked” that is what needs to hit 10km. Walked together distance hits 10km much before distance walked does.
