Can I get away with low defense? Or is it going to be too fragile to glass cannon?

None of those are particulary good, save your stardust and candies for when you find a better one.
That depends what you are trying to do with them. If you are battling in one of the leagues, then there are specific IVs that you want to look for. You can find these online or on the Poke Genie app.
The one with better stats is arguably the 3* one, but the 2* would work in the tiny cup battles.
I would check out Pome Genie. Especially if you are planning on doing much battling.
