Every time I catch a Pokémon this happens on this screen. Every button is simultaneously greyed out as if I was pressing it but the only way to leave this page is by restarting the app. My app and device are both updated, has anyone else had this problem?

Clear app cache, or Uninstall then reinstall, probably happened cause you didn’t close it properly, so there is corrupted data that causes the crash.
Sometimes, the phone is not compatible with the game at all( too old), but since you say your phone is also updated, probably the crash happened because of corrupted data.
If the first solution doesn’t work, then you could download all assets in advance settings.
If the second doesn’t work, ask niantic for help.
