I had this task and the ditto one in let’s go meltan at the same time and it took like two months. I’d suggest looking at Pokémon which can be ditto this season. Good luck!

There’s a professor’s special research from a tcg code where there’s a guaranteed ditto encounter. You can buy the code only on eBay etc.

Look for “easy to catch” Pokémon that have a “capture difficulty” at hard (red circle when holding pokeball, getting ready to throw). Also, look up a list of what Pokémon ditto can transform into in Pokémon go.
