In some cases is to stop people from loitering or entering to a place at certain times, and others are for the safety of players, but once a gym closes nobody can spin it, battle on it or place more Pokemon until it opens again.
Your Pokemon will continue to gain time on the gym, but won’t return until someone comes at the correct time where it can be knocked out.
