Long story short, you assign eevee as a buddy and do a few tasks, and the final one here is to evolve eevee into espeon during the day. Here’s the issue, I assigned my shiny eevee as my buddy, and assumed I could change my buddy to a different eevee later and get the same evolution option. However, that’s not the case. I don’t want to evolve my shiny eevee into espeon, I want to keep it as eevee. I tried evolving a bunch of eevees without the task (did about 5 and no espeon). Will I still get this task if I end up evolving any eevee into espeon during the day, or am I screwed? Also please ignore the shiny eevees name, it was from a joke on Pokémon brag (you can check my Reddit profile to see the post).

Any eevee is fine. You still have to follow the steps to get an espeon . All the steps have to be done with the one you’re going to evolve
You need to walk 10km with eevee as your buddy.
Have you used the name trick yet? If you haven’t you can nickname your eevee “Sakura” and it’ll evolve into espeon right away but you can only use the name trick once
