The major difference is one is shiny. But the attack IVs are the same so no difference. Even if the ivs were a difference of 5 you would not be able to tell the difference. So I would evolve both or which ever has a special place in your heart.
Imo I’d keep the shiny gible as gible because his shiny looks better than shiny Garchomp but same do what you’ll do
