I know shadow mamoswine is a good raider, but my non-shadow has better appraisal. Which would be the better investment?

Shadow is 20% better.
The appraisal does not really matter.

Technically the IVs don’t matter but super knowledgeable do indicate a 15 attack is important but I definitely would be picking the 14/15/14 one to level to 50. You could level both if you want but with Swinub being in the shadow Pokémon rotation I think the 15/1/12 is not really a great thing to do. You may end up with a perfect IV one something better with the 15 attack.
IVs for me is more of a do I transfer the Pokémon or not due to storage issues.
