I’d say shiny one because of the stardust expense you have to do. Typhlosion is not a top pokemon in PVE or PVP master league. If you want for PVE then go the shadow one

keep them at 2nd stage and maybe one day you can evolve them in to hisuian version (like how you can evolve koffing in to galarian weezing soon in an event)
