The incense that we use on those days is it the regular incense or is it the daily incense?

are they spawn only in daily incense
No shiny sandghast or even a NORMAL costumed dedenne for me (I live outside of town) BUT both com days were CRAZY. 2 shiny froakies, a 3 star shiny beldum and a lucky porygon z shiny! Couple of bagons and popplios here and there
