Whenever I play Fire Red, I find Nidoqueen to be my most versatile Pokemon. Bite makes her effective against Ghost Psychic Pokemon, even though the latter is supposed to be her counter. Double Kick makes her effective against the Rock Pokemon the rest of my usual team (Bulbasaur, Pidgeot, Arbok, Butterfree and Beedrill… yes, I know), aren't effective against and usually Surf takes care of the other types.
And even if she doesn't have an effective attack against the opponent, her being a Poison/Ground type at least gives her the advanatge that many Pokemon aren't very effective against her.
Now, I'm aware that there are better Pokemon than Nidoqueen, especially if you are into all the IV stuff. But during my casual runs, I always find her to be my Jack of all Trades.
