Edit 2 : The rate is boosted to 1/128 for those interested
My group of player is currently at 1 shiny out of 720 quests (cottonee, eevee and buneary combined)
I know it's rng and it's not a big enough sample to be representative.
However, I was under the impression that following the 30th anniversary event, all quests (and raids) would have a boosted shiny rate.
Boosted rates have been(so far) either 1/64 or 1/128, 1 shiny out of 720 isn't impossible (it never is) but feels really unlucky.
Do we have any idea of the current rate? And if it's not boosted… Shouldn't it be boosted?
I know 9bd (the Japanese website) used to let players indicate how many encounters and shinies they had gotten, but I couldn't find it for the current event.
Edit : the blog post didn't actually mention boosted odds in quests, only eggs and raids, my bad

Encounter Shiny Pokémon!
Feeling lucky, Trainers?
Any evolved Pokémon in the wild can be Shiny if it has already had its Shiny debut in Pokémon GO!
In addition, Trainers will have an increased chance of encountering Shiny Pokémon from Raid Battles and hatching them from Eggs compared to wild encounters.
Any Pokémon rescued from Team GO Rocket that has made its Shiny debut can also be Shiny—if you’re lucky! Trainers will have an increased chance of rescuing Shiny Pokémon from Team GO Rocket leaders and Giovanni compared to Grunts
