I got both these challenges. Only the problem is one of them is regirock and the other is for regice… and if i complete both at the same time, does that mean i will get both or will i only get 1 of them or do i get just a random pokemon because the event was from months ago?

Giovanni’s reward is on a fixed rotation and isn’t influenced by which research you are working on. Fighting him right now will always reward Regirock, regardless of what open research you have. In order to get Regice, you had to fight Giovanni between March 25th and June 20th.
If you fight him now and get Regirock, you will be able to complete both of these research tasks simultaneously, leaving you with a spare Super Rocket Radar that you can use whenever you want.
Alternatively, you can wait until they announce a legendary rotation for Giovanni, which will likely happen in September, October, or November. If you’re more interested in whatever his next Shadow Legendary, then you can hold off on completing these tasks until it changes. Then you’ll end up with the new Shadow Legendary, a spare Super Radar to use whenever you want, and you’ll get the next Rocket Special Research.
