This gave me an idea. If there could be a horseshoe crab fakemon (who’s not Kabuto), maybe Sakugiri could act as a “lower jaw” for this fakemon, while crab’s mandibles form the upper jaw.

These are really lovely concepts, the convergent aspect comes from them being shrimp instead of fish? Not the *most* transformative compared to jellyfish vs. mushroom, mole vs. eel, but I think it’s acceptable with Sinistea and Poltchageist both being ghosts. Although if you wanted them to be convergent forms you’d have to make them strong against their original counterpart-

Why not do what Sinistea and Poltchageist did and make these Dragon as well so that they technically follow the pattern? I honestly don’t get any Water theme out of them anyways. Dragon/Fire-type would be a pretty sick typing.
