With the upcoming changes on the 15th October I’m just wondering whether the full set of 3 tasks will still be available to me if I don’t progress them fast enough to hit the deadline?

It’s special research, it does not expire.
I reached level 50 about three weeks ago, now onto the second *page of the special research task. My educated guess, and in the absence of any news from Scopely, is yes – you will recieve the research.
Don’t trust anything. Just do them as fast as you can🤣
