I used the website randompokemon.com to give me a team of 6 to beat gen 1 with. I'd certainly recommend trying a run like this with a main series game you've already played to death. Maybe it's not the toughest challenge out there, but that just meant I didn't have to spend so long grinding :>
It was a really fun experience having to use sort of a weird team that I wouldn't make normally. As you can see the team's pretty lop-sided, I only had a Pinsir to reasonably take on water types with, and even then, having to tank Hydro Pumps and Blizzards with a 55 base Special stat was kind of terrible. My Pinsir came in clutch in other ways, too, between Swords Dance sweeps and clutch Guillotine hits against the Gyaradoses.
Obviously no shortage of strong physical attackers, but lacking good special attacks was quite painful. Still, my Marowak surprisingly came in useful with Bubblebeam and Ice Beam. My fire types unfortunately didn't end up getting much done, having only one TM for a good fire move is pretty rough in a game with such bad level up learnsets.
Movesets: Peble – Rock Slide, Earthquake, Explosion, Strength
KeepItRoar – Double-Edge, Fire Blast, Ember, Swift
Fesh Pince – Body Slam, Swords Dance, Submission, Guillotine
Skelecub – Earthquake, Ice Beam, Bubblebeam, Mega Kick
Terra – Dig, Slash, Sand Attack, Swift
Bojack – Stomp, Ember, Tail Whip, Fire Spin
I did use items in battle, as well as the Switch battle style, they're just kind of integral to my ability to beat the game with levels this low. Besides, they're in the game for a reason, anyway :p
